Zucchini & Carrot Bread

Baked goods are typically made using lots of butter and sugar which is why these foods are usually considered less healthy. This recipe takes a different approach and substitutes the less healthy ingredients for healthier ones such as using whole wheat flour and less sugar!

Ingredients (serves 10)

1/2 cup canola oil
1/2 cup sugar
2 eggs, beaten
1 teaspoon vanilla extract
3/4 cup zucchini, shredded
3/4 cup carrots, shredded
1/2 cup walnuts, chopped
1 1/2 cup whole wheat flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons cinnamon


Preparation

1. Preheat oven to 350˚F.
2. In a bowl, whisk together oil, sugar, eggs and vanilla extract.
3. Mix in the shredded zucchini, carrots and walnuts.
4. Whisk whole wheat flour, baking powder, baking soda, salt and cinnamon.
5. Mix dry ingredients into wet ingredients.
6. Grease loaf pan with oil.
7. Pour mixture into pan.
8. Bake in the oven at 350 degrees for 45-60 minutes until a toothpick or knife pushed into the center of the bread comes out clean.
