Peach and Quinoa Salad

This peach salad is full of color and nutrients. The creamy texture comes from the feta cheese and jam-based dressing. Add diced shallot for a bite and nuts or seeds for an added crunch!

Ingredients (serves 4)

Salad:

  • 5 ounces arugula or mixed greens
  • 2 cups sliced peaches
  • ⅓ cup pumpkin seeds
  • ⅓ cup golden raisins
  • ⅓ cup feta cheese
  • ½ cup quinoa (plus 1 cup water)
  • ½ shallot, diced (optional)

Vinaigrette:

  • 2 tbsp olive oil
  • 3 tbsp lemon juice, freshly squeezed
  • 2 tbsp raspberry (or other fruit) jam
  • Pinch salt

Preparation

  1. In a medium pot, bring ½ cup quinoa and 1 cup water to a boil.  Reduce heat to low and cover with a lid.  Simmer for 15 minutes or until all water is absorbed, stirring occasionally.  Set aside to cool. 
  2. In a small bowl, whisk together the olive oil, jam, lemon juice, and salt with a fork.  Set aside. 
  3. Slice peaches and discard pits.  Cut red onion into thin slices if using. 
  4. Assemble the salad: in a large bowl, combine greens, peaches, pumpkin seeds, golden raisins, feta cheese, cooked quinoa, and shallot. 
  5. Drizzle half of the dressing on top of the salad and toss. Add the rest of the dressing and toss again.  Serve and enjoy!
