Healthy Yogurt Brownies

These brownies are a super fudgy way to get your chocolate fix without going overboard with sugar, fat, and calories. 

Ingredients (serves 16)

  • 1/4 cup all-purpose flour (can use whole wheat or almond flour too) 
  • 1/4 cup cocoa powder 
  • ¼ tsp salt 
  • ½ cup bittersweet chocolate, chopped (4 oz) 
  • 2 TBS vegetable oil 
  • ½ cup granulated sugar 
  • ¾ cup plain Greek yogurt (can use low fat or nonfat) 
  • 2 large eggs 
  • 1 tsp vanilla extract 
  • ¼ cup chocolate chips to mix in 

Preparation

  1. Preheat oven to 350 degrees. Coat a 9 by 9 inch baking dish with nonstick spray. 
  2. Combine flour, cocoa powder, and salt in a small bowl and set aside. 
  3. Melt chocolate with oil in a small bowl in microwave or over a double boiler and set aside. 
  4. Mix sugar, Greek yogurt, eggs, and vanilla in a medium bowl. Add in melted chocolate/oil and mix well. 
  5. Add in flour mixture and mix until just combined. Add chocolate chips. 
  6. Pour into prepared baking dish and bake for about 20 minutes until the edges are slightly pulling away from the sides and the top is just barely set. 
  7. Cool and cut into 16 squares.
