Ingredients (serves 4)

  • 1 (10-ounce) package of frozen, chopped spinach 
  • 1 tablespoon olive oil 
  • 1 (16-ounce) package of shelf-stable potato gnocchi (you can substitute frozen cauliflower gnocchi if available) 
  • 2 links of cooked Italian chicken or turkey sausage, sliced in rounds or diced (optional) 
  • 1 (14-ounce) can of artichoke hearts, drained and quartered 
  • ¼ cup Parmesan cheese 

Preparation

  • Place spinach in a microwave-safe dish and heat on high until thawed, stirring once or twice. Alternatively, place it in a bowl and let it thaw in the refrigerator overnight. 
  • When cool enough to handle, working in batches, squeeze the water out of the spinach using your hands.  You want the spinach as dry as possible. 
  • Heat the olive oil in a large skillet over medium-high heat.  Add gnocchi and cook, stirring frequently, until browned, about 5 minutes. 
  • Stir in sausage (if using), artichoke hearts, and spinach.  Cook, stirring, until heated through, about three minutes. 
  • Sprinkle with Parmesan cheese and serve.  Enjoy!
