Flourless Black Bean Brownies

These brownies are a fudgy treat that can be whipped up in less than 30 minutes!

Black beans create the base, adding a hearty amount of fiber. The brownies are plant based, with no need for butter or eggs. This is a dessert you can feel good about eating without compromising taste!

Ingredients (serves 9)

  • 1 15-Ounce can low sodium black beans, rinsed and drained
  • 1/2 Cup quick-cooking or old fashioned oats
  • 2 Tablespoons cocoa powder
  • 1/4 Teaspoon salt
  • 1/4 Cup canola oil
  • 1/3 Cup pure maple syrup
  • 2 Teaspoons vanilla extract
  • 1/2 Teaspoon baking powder
  • 1/2 Cup chocolate chips (dairy free for vegan)
  • Nonstick cooking spray

Preparation

  1. Preheat oven to 350 degrees F.
  2. In a food processor or blender, combine black beans, oats, cocoa powder, salt, oil, maple syrup, vanilla, and baking powder.
  3. Blend until completely smooth. This may take a few minutes to break down the oats.
  4. Pour the mixture into a medium bowl.
  5. Fold in the chocolate chips with a spatula.
  6. Grease an 8×8 pan with non-stick cooking spray.
  7. Bake in the oven for 15-20 minutes, until cooked through.
