Easy Aloo Palak (Potato & Spinach)

Aloo Palak dish

Ingredients (serves 3)

  • 2 tbsp olive oil
  • 1 tsp cumin seeds
  •  2 cloves fresh garlic, finely chopped
  • 2 green chilies, deseeded and chopped
  • 1 medium onion, sliced
  • 2 cups potato, diced 1/2″ – 3/4“
  • 4 cups spinach, chopped
  • ¼ teaspoon kosher salt
  • ¼ tsp red chili powder
  • 1/8 tsp turmeric
  • 1 tbsp lemon Juice
  • 3 tbsp water
  • ¼ tsp garam masala
  • 1 tsp toasted sesame seeds
  • Drizzle of tahini, optional

Preparation

  1. Heat 2 tablespoons oil in a pan.
  2. When the oil turns hot add ¾ teaspoon cumin and let them toast.
  3. Then add 2 cloves of garlic and 1 to 2 green chilies. Cook for one minute.
  4. Next add sliced onion and let cook until light golden.
  5. Add potatoes to pan and saute for 3-4 minutes. Stir fry until the potatoes are fork tender. Pour 3 tablespoons water and cook covered until tender but not mushy.
  6. Then add turmeric, salt, chili powder, & garam masala (optional). Saute for 1-2 minutes. Taste test and add more salt or spice as desired.
  7. Next add 4 cups of chopped spinach. Saute on a medium high flame for about 3 minutes or until the leaves wilt. When the moisture evaporates turn off the stove.
  8. You can sprinkle 1 tsp of toasted sesame seeds and the lemon juice before serving. You may also add a drizzle of tahini for some creaminess. Serve aloo palak as a side dish or in a wrap.
