Aloo Palak is a simple Indian dish made with potatoes, spinach, spices, and herbs. It pairs perfectly with roti, bread, rice, or as a filling for sandwiches or wraps.
When the oil turns hot add ¾ teaspoon cumin and let them toast.
Then add 2 cloves of garlic and 1 to 2 green chilies. Cook for one minute.
Next add sliced onion and let cook until light golden.
Add potatoes to pan and saute for 3-4 minutes. Stir fry until the potatoes are fork tender. Pour 3 tablespoons water and cook covered until tender but not mushy.
Then add turmeric, salt, chili powder, & garam masala (optional). Saute for 1-2 minutes. Taste test and add more salt or spice as desired.
Next add 4 cups of chopped spinach. Saute on a medium high flame for about 3 minutes or until the leaves wilt. When the moisture evaporates turn off the stove.
You can sprinkle 1 tsp of toasted sesame seeds and the lemon juice before serving. You may also add a drizzle of tahini for some creaminess. Serve aloo palak as a side dish or in a wrap.
