Cranberry Orange Bread

A tangy and delicious cranberry-orange loaf that’s perfect for breakfast or a snack! Packed with fresh cranberries, zesty orange flavor, and a touch of sweetness, this easy recipe comes together quickly for a satisfying bite on the go.

Ingredients (serves 12)

  • 2 cups whole wheat pastry flour (or white whole wheat flour) 
  • ½ cup white sugar 
  • 1 ½ tsp baking powder 
  • ½ tsp baking soda 
  • ½ tsp salt 
  • ¼ cup butter 
  • ¾ cup orange juice 
  • 1 tsp orange zest 
  • 1 large egg 
  • 1 cup chopped cranberries, fresh or dried 
  • ½ cup chopped walnuts or pecans (optional) 

Preparation

  1. Preheat oven to 350 degrees F. Grease 9×5 in. loaf pan and coat with flour or sugar. 
  2. In a large mixing bowl combine dry ingredients – flour, sugar, baking powder, baking soda, and salt. Cut in butter until the mixture resembles coarse cornmeal. 
  3. Combine orange juice, zest, and egg in a small cup and pour into dry ingredients, mixing until just combined. 
  4. Fold in cranberries (and optional nuts) and spread into a loaf pan. 
  5. Bake for 55-60 minutes or until toothpick comes out clean. Let cool for at least 10 minutes.
