These Chicken Pesto Wraps are flavorful, nutritious, and ready in minutes! Packed with protein and healthy fats, they’re the perfect option for meal prep or a quick, satisfying lunch!
Prepare the ingredients. If you haven’t already, shred the chicken (from rotisserie or leftovers). Slice the avocado and chop the artichoke hearts. If you’re using fresh mozzarella, grate it or tear it into small pieces.
Lay the tortilla flat and spread pesto, then layer mozzarella, chicken, artichoke hearts and sliced avocado in the center. Optional: sprinkle with Italian seasoning and add a handful of arugula or fresh spinach on top.
Fold the sides of the tortilla in toward the center so they are almost touching. Lift the bottom flap of the tortilla from one end and roll tightly from one end to the other to form a wrap.
Optional: Preheat a grill pan or skillet over medium-high heat. Brush both sides of the wrap with oil.
Optional: Grill the wraps for 4-6 minutes on each side or until they’re golden brown and crispy.
If desired, cut the wrap in half and enjoy!
