Apple Spice Muffins

These Apple Spice Muffins are a perfect blend of cozy fall flavors. They’re quick to whip up, ideal for breakfast, snacks, or dessert. Enjoy them warm with a spread of butter or a drizzle of honey for an extra touch of sweetness!

Ingredients (serves 12)

  • 1 1/3 cups whole wheat flour 
  • 2/3 cup rolled oats 
  • 1/2 cup brown sugar 
  • 2 tsp cinnamon 
  • 1/4 tsp nutmeg 
  • 1 tsp baking powder 
  • 1/2 tsp baking soda 
  • 1/4 tsp salt 
  • 2 eggs 
  • 2 cups apples diced 
  • 3/4 cup vegetable oil 
  • 1/4 cup low fat milk 
  • 1 tsp vanilla extract 

Preparation

  1. Preheat the oven to 350°F. Spray muffin tin with non-stick spray. 
  2. In a large bowl, whisk together the eggs. Add in the oil, milk and vanilla extract.  
  3. In a medium sized bowl add all of the dry ingredients and stir. 
  4. Add the dry ingredients to the wet and mix together. Fold in the chopped apples.  
  5. Add the batter evenly among the muffin tin.  
  6. Bake for 19-22 minutes or until an inserted toothpick comes out clean.
