What better way to start a fall morning than this warm Apple Pie Baked Oatmeal? It’s a great meal-prep option and makes for a nutritious and filling breakfast. This recipe is naturally gluten-free and can be made vegan by using flax eggs instead of eggs.

Ingredients (serves 6)

For the apples

  • 2-3 medium apples  
  • 1 tbsp lemon juice  
  • 1 tbsp brown sugar  
  • 1 tsp cinnamon  

Dry ingredients

  • 3 cups rolled oats  
  • ½ cup chopped nut or seed of choice  
  • 1 tsp cinnamon  
  • ¼ tsp nutmeg  
  • ¼ tsp ground ginger  
  • ¼ tsp salt  

Wet ingredients

  • 1 ¾ cups milk of choice 
  • ½ cup unsweetened apple sauce  
  • ¼ cup maple syrup  
  • 2 large eggs  
  • 1 tsp vanilla extract  

Preparation

  1. Preheat oven to 350F. Spray a 9×9 inch baking pan with oil and set aside.  
  2. Cut apples into small cubes and place in bowl. Mix in lemon juice, brown sugar, and cinnamon. Toss to coat and set aside.  
  3. In a separate bowl, combine dry ingredients.  
  4. In another bowl, whisk together the wet ingredients and pour into dry ingredients. Mix well and add apples.  
  5. Pour mixture into prepared baking pan and bake in oven for 35-45 minutes until center is completely set
