Have you ever wondered how you can make a cake or muffin just a bit healthier? This recipe provides two easy ways to boost the healthfulness of muffins by swapping some of the oil for applesauce and using whole wheat flour.
Ingredients (serves 16)
1 1/4 cup whole wheat flour
1 cup all purpose flour
3/4 cup granulated sugar
1/2 cup packed brown sugar
1 Tbsp ground cinnamon
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
6 Tbsp vegetable or canola oil
6 Tbsp unsweetened applesauce
1 tsp vanilla extract
3 eggs
2 cups apples, peeled and finely chopped
Preparation
Preheat oven to 325°F.
Line the muffin pan with cupcake liners or spray the pan with cooking oil spray.
Whisk the flours, sugar, brown sugar, cinnamon, baking powder, and salt together in mixing bowl.
Add the oil, applesauce, vanilla, and eggs to the flour/sugar mixture and stir with rubber spatula until combined.
Stir in chopped apples.
Scoop into prepared muffin pan.
Bake for 22-25 minutes or until toothpick inserted comes out clean. Enjoy!
