Instant Pot Mexican Black Beans & Rice

In this easy dish, brown rice is cooked in a flavorful sauce with garlic, salt, a bay leaf and cumin. Canned black beans make this recipe very convenient. Make this as a vegetarian meal or as a side dish.

Ingredients (serves 10)

  • 2 (15 ounce) cans of black beans, rinsed and drained
  • 1 1/2 cups long grain brown rice
  • 3 cups water
  • 1/2 cups picante sauce or salsa (plus more, if needed), low sodium if possible
  • 1 bay leaf
  • 2 tsp cumin
  • 1 tsp salt
  • 2 cloves garlic, minced
  • Lime juice

Preparation

1. Place rinsed beans, rice, water, picante sauce or salsa, bay leaf, cumin, garlic, and salt in the Instant Pot.

2. Cover and make sure valve is on “sealing.” Press the manual button and set to 22 minutes.

3. When the timer beeps let the pot sit for at least 10 minutes and then release any additional pressure. Stir a bit and discard the bay leaf. Add in lime juice and additional picante sauce or salsa to brighten it up, if needed.

4. Scoop into bowls and top with desired toppings such as cheese, avocado slices, cilantro, or chopped peppers.
