Vegan Waffles with Mushroom Wings

Our recipe for Vegan Waffles and Mushroom Wings is proof that healthy food really can boast flavor and love. We substitute fried chicken with fried mushrooms, which give you umami, chewy consistency, fiber, and succulent flavor.

Ingredients (serves 8)

Vegan Waffles

  • 3 tablespoons ground flaxseed (equivalent of 3 eggs)
  •  ½ cup water
  • 6 tablespoons vegan butter, such as Earth Balance, melted
  • 1 ½ cups non-dairy milk (soy milk, for example)
  • 1 ¾ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon granulated sugar
  • Pinch of salt

Mushroom Wings

  • 16 ounces oyster mushrooms
  • 2 cups water
  • ¼ cup flax seed powder
  • 2 drops liquid smoke
  • 2 cups all-purpose flour
  • 1/2 cup nutritional yeast
  • 1 teaspoon smoked paprika
  • 1 teaspoon mace
  • 1 teaspoon sea salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon allspice
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon sage
  • 1/2 teaspoon black pepper
  • 1 teaspoon Cajun spice
  • 2 cups canola oil

Rosemary Maple Syrup

  • 2 cups maple syrup
  • 1/2 cup honey
  •  1/2 cup rosemary leaves
  • 1 tablespoon black peppercorn

Preparation

Vegan Waffles

  1. Preheat your waffle iron.
  2. Stir the ground flaxseed and water together and let them sit until you reach a thick and creamy consistency. Add the melted butter and non-dairy milk. Whisk together until well incorporated.
  3. Separately, in a large bowl, combine the flour, baking powder, sugar, and salt. Stir. Then create a well in the center of your dry ingredients and pour in the milk mixture. Whisk until combined.
  4. Scoop your desired amount of batter onto the hot waffle iron, close the lid, and cook until the waffle is golden brown (usually 3-4 minutes).

Mushroom Wings

  1. Clean your mushroom. Lightly scrub the base to remove any dirt.
  2. Slice the mushroom longways, at about 1/2-to-1-inch slices.
  3. In a wide bowl, whisk your flax seed powder with the liquid smoke, then set aside.
  4. In another wide bowl, add all your dry ingredients and mix well.
  5. Take a mushroom slice, dunk it first in the flax egg then in the flour mixture. Repeat 2-3 times for a thicker breading.
  6. Using a non-stick pan, heat up enough oil to thoroughly cover the bottom surface, about 1-inch deep, on medium heat. The amount will vary based on the size of your pan.
  7. Fry for 4-5 minutes on medium heat while covered, then flip and repeat.
  8. Place the cooked mushroom on parchment paper or a clean towel to absorb excess oil.

Rosemary Maple Syrup

  1. Combine the ingredients in a small saucepan.
  2. Bring to a boil, but keep an eye on it and do not let it pour over. Then simmer for 1 minute.
  3. Remove from heat. Let syrup steep for 30 minutes.
