1/2 tablespoon olive oil
1/4 cup water
1 medium/large unpeeled eggplant, cut into 1” pieces
Salt, to taste
Black pepper, to taste
2 garlic cloves, minced
2 tablespoons fresh basil, chopped (or 2 teaspoon dried)
1/2 teaspoon dried oregano
1 1/2 cups breadcrumbs
1 large egg, beaten
2 ounces grated Parmesan Cheese
1 tablespoon fresh flat-leaf parsley, chopped (or 1 teaspoon dried)
SUGGESTIONS
