Ingredients (serves 6)

3 avocados
½ cup diced white onion
¼ cup cotija cheese or feta cheese
3 tablespoons dried cranberries
2 tablespoons pumpkin seeds
Juice from ½ of a lime
2 tablespoons cilantro, roughly chopped
Pinch of salt
1 clove of garlic, minced


Preparation

1) Mash avocados and lime juice in a large bowl until you reach a desire consistency (typically chunky-smooth).

2) Fold in the onion, cilantro, salt, cotija (or feta) cheese, dried cranberries, and pumpkin seeds until combined.

3) Garnish dish with cotija (or feta) cheese.

4) Serve with your favorite veggies, whole grain crackers, or pita!
