Roasted Tomato “Anything”

Roasted tomatoes can be the base or a sauce for many different summertime dishes. Use them to top pasta, as an appetizer, on salads, or even as a condiment for sandwiches. Roast up a bunch of fresh summer tomatoes and use them in the ways described here or however you like them. 

Ingredients (serves 4)

  • 1 pound cherry or grape tomatoes, cut into halves 
  • 2 Tablespoons olive or vegetable oil 
  • 3-4 garlic cloves, peeled 
  • 1/2 teaspoon salt 
  • 1/4 teaspoon black pepper 

Preparation

 

  1. Preheat oven to 400 degrees F. 
  2. Drizzle one tablespoon of oil in the bottom of a 9 by 13 baking dish. 
  3. Arrange tomatoes and garlic cloves in a single layer in dish. Drizzle with remaining oil. 
  4. Sprinkle tomatoes with salt and pepper. 
  5. Roast in oven for about 20 minutes until the tomatoes are starting to burst and look bubbly. 
  6. Remove from oven, carefully smash garlic cloves with a fork, and mix everything together. 
  7. Now your tomatoes are ready to use as a pasta sauce, mixed with a can of drained white beans, on top of toasted bread as an appetizer, or as a topping to a salad. 
  8. Add fresh herbs such as basil or parsley and a sprinkling of parmesan cheese for a delicious summer meal.
