Granola bars can be a healthy snack for a mid-day pick me up. Yet lots of granola bars in the store can be made with a lengthy list of ingredients, including added sugars and preservatives. With this recipe, you’ll know exactly what’s going into your chewy snack. What’s better? Making this simple, 5-ingredient version can actually save money compared to store-bought granola bars! 

There’s also quite a few substitutions that can be made to adjust for food allergies or restrictions. For gluten-free bars, be sure to use certified gluten-free oats. For peanut allergies, substitute peanut butter with another nut butter such as walnut or almond butter. Sun butter, which is made from sunflower seeds, is another alternative to keep this snack 100% nut free. Finally, if you’re looking for a vegan alternative, swap out the eggs for flax “eggs.” 

Ingredients (serves 16)

  • 3 cups old-fashioned rolled oats 
  • 3/4 cup natural peanut butter (can substitute nut or seed butter of choice) 
  • 1/3 cup maple syrup 
  • 1/2 cup mini chocolate chips 
  • 2 eggs 

Preparation

  1. Preheat oven to 350℉. Grease a 9 x 9 inch baking dish or line with parchment paper for easy removal. 
  2. In a large bowl, combine all ingredients and mix well. 
  3. Transfer mixture to baking dish. Firmly press mixture into pan in an even layer. 
  4. Bake for 12-17 minutes or until center is baked through. 
  5. Let the bars cool completely, then cut into 16 squares.
