Invigorate your tastebuds with refreshing, crisp, and delicious flavors this spring! Our Quinoa Salad will lift you right out of that mid-afternoon slumber while keeping you feeling full and satisfied until dinner time.
Ingredients (serves 2)
1 cup quinoa cooked in 2 cups of water or low-sodium chicken or vegetable stock
1 large red pepper
2 medium cucumbers, ½“ diced
1 large carrot, grated
½ cup fresh cilantro
Juice of 2 lemons or limes
1 ½ Tbsp soy sauce
2 tsp minced ginger
2 tsp sesame oil
Preparation
Rinse quinoa well in a fine sieve (to remove bitter flavor). Mix 1 cup of quinoa with 1 ½ cups of water or stock. Bring to a boil, reduce heat to very low and cook 10 minutes or per package directions. Turn off the heat and allow quinoa to rest for another 10 minutes. Place in a large bowl and fluff with a fork.
While the quinoa is cooking, prepare the vegetables and cilantro, then add to the quinoa once ready.
Add all the dressing ingredients into the bowl and mix well. Enjoy!
