Cranberry Rosemary Chicken

This festive, one-pan dish makes for a great addition to your dinner table this holiday season. The garlic, rosemary, and citrus provide a sweet and savory flavor combination and the simple ingredients help make this dish low-calorie. In fact, our nutrition department gives this recipe a stamp of approval for most of our critically ill clients, including those who require a renal, cardiac, or diabetic-friendly diet.

Ingredients (serves 2)

  • 1 lb boneless skinless chicken thighs
  • 1 cup cranberry juice
  • 2 tablespoons canola oil
  • 1-2 cups fresh or frozen whole cranberries cranberries
  • 2 tablespoons fresh chopped rosemary
  • 1 teaspoon salt
  • 1-2 teaspoons pepper
  • 1-2 cloves garlic, minced

Preparation

  1. Combine all of the marinade ingredients. Add to chicken.
  2. Marinade overnight.
  3. Roast the chicken and marinade together at 325 degrees Fahrenheit for 40 min or to an internal temp of 165 degrees Fahrenheit.
