Apple Carrot Ginger Soup

This warm, brightly-colored soup (with just a hint of spicy ginger and sweet apple) will be found in many of our clients’ meal bag this holiday season. The spicy ginger is balanced with sweet apple and carrots.

Ingredients (serves 4)

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 3-4 carrots, peeled and chopped
  • 4 cups low sodium chicken or vegetable stock
  • 2 apples, peeled and chopped
  • 1 tablespoon fresh ginger, chopped
  • 1 teaspoon orange zest
  • 1 tablespoon lemon juice
  • 1 teaspoon salt or more to taste
  • ½ teaspoon pepper

Preparation

1. In a large pot, saute onions in olive oil.
2. Add carrots and cook until soft.
3. Add apples. Cook until tender.
4. Add ginger, lemon juice, and orange zest. Add salt and pepper.
5. Blend until smooth
