Blackened Fish Tacos

Give tacos a summer flair with this fresh, flavorful recipe! Fish is a great source of omega-3 fatty acids, which have been shown to lower blood pressure and triglyceride levels, thus boosting heart health. We chose cod, but substitute with your favorite white fish!

Ingredients (serves 4)

Tacos:

  • 1 1/2 lbs. cod fillet (or preferred white fish)
  • 3 Tbsp. unsalted butter, melted
  • 2 tsp smoked paprika
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 1/2 tsp dried oregano
  • 1 1/2 tsp dried thyme
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper
  • 2 tsp brown sugar, packed
  • 8 corn tortillas

Salsa:

  • 1 ripe mango, diced
  • 1/4 cup diced red onion
  • 1 jalapeño pepper, seeded and minced
  • 2 Tbsp. finely chopped cilantro
  • Juice of 1 lime

Preparation

  1. Preheat oven to 425 degrees F.
  2. Melt butter in a microwave safe bowl. In a separate bowl, mix the taco seasonings (paprika through brown sugar), until well combined.
  3. Dip fish fillets into butter, allowing excess butter to drip off. Then dip fish into the seasoning and flip it around to coat the fillet on all sides.
  4. Place an oven-proof skillet into the preheated oven. Let it heat through for a few minutes. Remove from oven and pour in remaining melted butter. Add seasoned fish fillets and bake for 13-15 minutes, or until cooked through.
  5. Meanwhile, prepare the salsa by combining all the ingredients until well combined.
  6. Heat tortillas in the microwave, layered between moist paper towels.
  7. Fill each tortilla with 2.5 ounces of fish. Top with salsa and serve immediately.
