Chicken Ratatouille
An easy one pot meal with tons of summer vegetables!
Ingredients (serves )
1. 2 tablespoons canola oil 2. 1 whole boneless, skinless chicken breast 3. 1 small zucchini 4. 1 small or 1/2 medium eggplant, peeled and cubed 5. 1/2 green pepper, seeded and sliced 6. 1 cup mushrooms, sliced 7. 2 medium tomatoes, diced 8. 1 clove garlic, chopped 9. 1/4 teaspoon black pepper 10. 1 teaspoon chopped fresh (or 1/4 t dried) parsley 11. 1 teaspoon chopped fresh (or 1/4 t dried) basil 12. 1 1/2 cups cooked brown rice for serving
Preparation
1. Heat oil on medium heat in a frying pan. Add chicken pieces and stir fry about 2 minutes. 2. Add garlic, zucchini, eggplant, green pepper, and mushrooms and cook, stirring occasionally, 10-15 minutes. 3. Add tomato and herbs and stir carefully. 4. Serve hot over brown rice.
