Roasted Carrot, Feta Cheese and Fresh Cilantro Salad

 

This salad is a great side dish with a mixture of flavors and colors. Carrots are orange because of a compound called antioxidants. Antioxidants are the compound in fruits and vegetables that make them colorful. Antioxidants also help protect your body from cancer. Feta cheese is commonly used in Greek dishes and adds a salty flavor to this salad. Cilantro is an herb that is usually used in salsas and guacamole and is common in Asian and Mexican dishes. Cilantro tastes fresh and exotic.

Ingredients (serves 3/4 cup)

2 pounds carrots, peeled and cut into the size of matchsticks

2 Tablespoons olive oil

2 Tablespoons fresh cilantro, chopped

2 ounces feta cheese, crumbled

Pepper to taste

Preparation

1. Preheat oven to 400 degrees

2. Toss cut carrots with olive oil

3. Spread carrots evenly on a baking sheet and place in the oven 4. Turn the carrots often and cook until soft and the edges begin to turn brown

5. Cool the carrots at room temperature

6. Mix the cooked carrots with the cilantro

7. Crumble the feta on top of the carrot mixture just before serving

8. Serve cold
